Think of the Emergency Munchie Truck — or EMT — as a vehicle speeding to the rescue of any skepticism you have about food truck cuisine. There are no inferior ingredients, oily options, or soggy salt bombs here, just an imaginative, inspired menu of vegetarian waffle sandwiches.

Yes, vegetarian waffle sandwiches. The savory waffles’ divots are perfect pockets in which to preserve delicious homemade sauces and gooey cheeses. And the vegetarian spin lets the EMT offer hearty and heart-healthy spins on comfort food. As summer’s late stages shift into milder fall temperatures, EMT is a prime option for safe socially distanced dining at outdoor events.
Indeed, as seasons change, so will EMT’s specials — and they sometimes offer dishes themed to the events where you will find them. (You can even request that the EMT visit your neighborhood, with a minimum- purchase threshold.) The EMT sources from local producers when possible (including popular local bakery Smittybread for some bread-based sandwiches) and incorporates ingredients from the owners’ garden. Depending on when you catch the EMT, you may be able to get a sandwich on a bun. With all due respect to what I’m sure is a very tasty bun: Where’s the fun in that? Again: Waffle sandwiches, people!
The EMT’s menu mainstays constitute combinations of cheese, macaroni and cheese and black bean burgers. The Classic G.C. blends mild Cheddar and Muenster for a gourmet grilled cheese. Toss in macaroni & cheese and you’ve got a Triple M. Going spicy? Try the Triple B (combining a chipotle black bean burger, blue cheese crumbles and spicy buffalo sauce) or the Mac N Black (Muenster and mac with a spicy black bean burger and buffalo sauce). Don’t forget a side of G Fries, garlic-pepper fries with secret Munchie sauce (think a spicy ranch). Tiny orbs of perfection, the Mac Nugget Poppers blend the best of jalapeño poppers and mac and cheese bites. Finally, for the sweet tooth, the Nutty Monkey gives you the choice of Nutella or peanut butter stuffed with bananas and dusted with powdered sugar. You can also swap in vegan and gluten-free options on almost any item for a small additional charge.
The EMT has standing engagements at the West Lafayette Farmers Market from 3:30 to 7 p.m. on Wednesdays through October, as well as alternating Thursdays and Fridays from 5 to 8 p.m. at Brokerage Brewing Company in West Lafayette. But you’ll find them at community and park events over the next several weeks, so be sure to check its website, Facebook and Twitter for the latest updates. After all, the EMT is one ambulance that’s acceptable, and delicious, to chase.
